White Wines - The Most Popular



Wine. Not what you do when you don't get your way. What you drink with a fine meal. Well, maybe not what you drink, depending on your tastes, but what a lot of people drink. Some would say that there is nothing like a fine wine. So the question we're going to try to answer in this article is just what IS a fine wine?


Well, there is basically red wine and white wine. And since it's bad etiquette to mixed them together we're going to concentrate on what are considered the finest white wines in this article.


Naturally there will be experts who will disagree when it comes to what the finest white wines are but the following list is a pretty safe bet with most people.


One of the most popular white wines today is Pinot Grigio. The wine comes from the Northeast region of Veneto and Friuli. The tastes of this wine range from melon to pear and some even offer a subtle tropical or citrus fruit, often there is a honey or smoky flavor component as well. As for color, Pinot Grigio is typically a pale, straw-like yellow with some golden hues thrown in to boot. This wine goes very well with seafood, light pastas and cheese cracker combinations. Since this wine is fairly acidic itself, avoid drinking it with foods that are high in acid concentration, like citrus fruits or tomato-based recipes.


Another very popular white wine is what they call a Chardonnay. There are many types of these wines. These are what they call "low maintenance" wines that adapt well to a variety of climates which means that quite a bit of this wine can be produced, usually in the millions of bottles per year. Because of this you can get a good Chardonnay for around $10. Some of the more popular Chardonnay wines are Jacob's Creek, which goes great with chicken, veggies or shrimp, Eola Hills which is fine with grilled salmon or smoked tuna, Carmenet, which is wonderful with cheese, Round Hill, which is a great wine to have with pork and poultry and the list goes on and on.


Another very popular white wine is champagne. Yes, champagne is a white wine, just a very fancy one. There is a light taste and fizz to champagne that is unlike any other white wine. There is no denying that nothing tastes quite like champagne. That is why you will find this wine at the fanciest parties and gatherings and of course it is the drink of choice for New Year's Eve. The best champagnes are very expensive. They are derived from a blend of grapes such as Chardonnay, Pinot Noir or Pinot Meunier. Champagne is considered a sparkling wine, due to the bubbles, which are formed during a second fermentation process. This second fermentation takes still wine and seals in the carbon dioxide that is formed when yeast converts sugar into alcohol, making for millions of bubbles with no place to go. The most expensive popular champagne of today is Deutz 1990 Cuvee William Brut at $215 a bottle. So if you're going to drink a lot of champagne prepare a nice budget beforehand.


The above is only the tip of the iceberg of white wines but they are the most popular. In our next article we'll see what red wines have to offer for our tastes.

A Guide to South Africa's Winelands



In 1652 the Dutch East India company establishment a refreshment station at the Cape of Good Hope aiming to provide fresh food to the company's fleet on voyages to India and surrounding areas. As a result of this trading station South Africa now boasts a flourishing wine industry and colourful, multi-cultural nation.


The fertile soil and Mediterranean climate of the Western Cape, makes the Cape Winelands one of the most renowned wine producing areas in the world. The Western Cape is also cooler than its position of 34? South of the equator might suggest, making the area ideal for growing a wide range of noble vine varieties such as Sauvignon Blanc, Chardonnay, Cabernet Sauvignon, Shiraz and Pinot Noir. The traditional wine growing areas along the coastal regions are seldom more than 50km from the ocean and are exposed to cool breezes blowing in from the sea.


All the wine grape varietals cultivated in South Africa, belong to the Vitis vinifera species, originally brought from Europe. Unfortunately these European vines were susceptible to phylloxera and as a result many South African viticulturists these days often have to graft their vines onto American rootstock in order to resist the insect.


Although Cape Town and the nearby Boland basin is best-known for it's superb Bordeaux-style red wines, the wine-producing regions of the province extends further north- and eastwards and has established itself as producer of world-class red, white, fortified and sparkling wines from a wide range of varietals.


Constantia

The oldest and one of the most famous wine farms in the area is Groot Constantia, which was granted to governor Simon van der Stel in 1685, by the Dutch East India Company. The estate is located on the Southern Slopes of Table Mountain and is still world-renowned for it's superb wines and breathtaking location. It's beautiful Cape Dutch homestead also forms part of the Iziko South African National Museums. The Constantia region also features such formidable estates as Steenberg well know for it's Reserve Sauvignon Blanc and Semmilon while the nearby Buitenverwachting produces outstanding Chardonnay. Both estates feature award-winning restaurants.


Boland

From Cape Town, the Winelands spread north-east and eastwards to the beautiful Boland basin with Stellenbosch, Paarl, Franschhoek and Wellington being the most prominent producers. Some of the oldest wine farms in South Africa are situated in and around this beautiful Cape Dutch village, which at over 300-years old, is the oldest town in the country. Although the area hosts an endless amount of superior wine estates, well-known farms towards the east include the Shiraz and Port producing Alto; the prolific Blaauwklippen estate which produces one of the only Zinfandel's in the region; the red wine producing Delheim; the famous Lanzerac estate and hotel; the prominent Middelvlei; the international award-winning red wine producing Rust en Vrede estate; Vriesenhof with it's outstanding white wines; the exclusive Engelbrecht Els estate and the beautiful Tokara with it's adjoining restaurant managed by famous local chef and saucier Etienne Bonthuys.


Towards the west of the town there's the well-known Beyerskloof, famous for it's award-winning Pinotage; the superior sparkling wine producing House of JC Le Roux, the scenic Meerlust estate with it's legendary Rubicon blend; the family-run Overgaauw; the "Cap Classique" producing Villiera and Zevenwacht estate.


The nearby Franschhoek, which translates as "French corner" also boasts some of the country's oldest estates: The beautiful Boschendal with it's typical Cape Dutch homestead; Cabriere Estate with it's flagship range of Pierre Jourdan "Methode Cape Classique" sparkling wines; Graham Beck with it's signature Brut Blanc de Blanc sparkling wine and Rhona Muscadel; and the beautiful La Motte estate which produces outstanding Shiraz.


Overberg

On the otherside of the Franschhoek and Hottentots Holland mountain ranges, the Overberg region includes quaint villages such as McGregor, Montagu and Robertson - the latter boasts the De Wetshof estate, owned by the prolific Chardonnay producer Danie de Wet, while the nearby Hemel-and-Aarde valley close to Hermanus is home to such spectacular wineries as Hamilton Russel with it's well-known Pinot Noir and the legendary Bouchard Finlayson.


Swartland

North of Cape Town, the predominantly wheat producing Swartland region includes the fructuous Riebeek valley, well-known for it's Shiraz wines and olive farms. This region hosts such prestigious estates as Kloovenburg, Allesverloren and Twee Jonge Gezellen, as well as the larger co-operative wineries such as Riebeek Cellars, Swartland Cellars and Darling Cellars, extending further east, towards the Hexrivier Valley at De Doorns and north towards the Olifants River valley close to Citrusdal and the fruitful Orange River Valley near Upington in the Northern Cape.

Wine Chillers and Refrigeration: Isn't temperature control enough?



There are a number of names used to describe wine cooling equipment and essentially they are all the same but when you look more closely they're not. First question to ask: what's the reason for buying a wine refrigerator? Because if you're looking for an economical solution, (for example: you would use your kitchen fridge; if it had ample space for storing your bottles, but it doesn't) that's one kind of wine refrigerator; and another type of wine refrigerator does more than control air temperature, it controls humidity levels as well.


Isn't Temperature Control Enough


You will pay for desired features and having 2 or multiple temperature zones as opposed to 1 temperature zone is an example. Price will also increase with features like greater bottle count and storage capacity, along with features like rolling racks, stainless steel and interior lights. If you are looking to store and preserve/age wine, keep in mind that the environment will have to mimic a wine cave, which means things like no vibrations, and constant temperature and humidity control. Many of the wine refrigerators, especially the compact ones, are not engineered to control humidity and age wine. Instead they are excellent chillers for short term storage. There are wine cabinets and cellars designed to store and age wine and Eurocave makes several.

Choosing the Right Type of Wine



Wines as we know them are generally distinguished as either red or white wine. However, this distinction is much too simplified considering the various types of wine depending on the grapes they were made of and the location of the vineyard where they were grown.



Having invested possibly hundreds of dollars in your latest bottle of vintage wine (ah well, we can but dream), the next important decision is where to store this prized possession?



The knowledge that wine can come in hundreds, perhaps thousands of flavors, can leave you with a feeling of dread especially when you have to order wine in restaurants. The basic rule is that there is no one perfect wine because it really depends on your own taste buds. An expensive wine that may taste perfect for one can taste horrible to another.



When ordering wine in restaurant, ask for the wine you personally prefer or have gotten familiar to the taste of. If you are the adventurous type or you really don't have an idea which wines are good, then it is always practical to ask the help of the waiter or the restaurant staff taking your order. It is proper to surmise that the staff or waiter should have been given instructions and the basic training in wine selection by the restaurant owner or manager. But what if the waiter is just as ignorant as their customers about their wine list? What if the big decision as to which wine to order is left in your hands?

If no one on the staff is knowledgeable about wines or can't make suggestions, ask the waiter to just come back and then ask your companions about their preferences. Ask your dining companions whether they prefer red or white wine. The most common choices would be chardonnay for white wine as this is the king of white wine, or cabernet sauvignon for red wine as this is known as the king of red wine. No other choice could be much safer.



Wines benefit from being kept in dark conditions. Although this is not always practical, wine should certainly be stored in an area that is not exposed it to direct sunlight.



If you are eating white meat life fish or chicken, it would be best to order white wine. If you have chosen red meat like pork or beef roast, then red wine lie Pinot Noir would be an ideal wine to order. Ordering wine by the bottle is sometimes cheaper than ordering wine by glass. There are restaurants that offer discounts to customers who order two or more bottles of wine.



Whether or not you have a limited budget, it is always wise to ask for the price of wine per bottle or per glass, if only to have a stock knowledge of their prices the next time you are tasked with the same decision to order wine for the group. If money isn't a problem for you, then Dom Perignon would be a good choice although this wine is higher priced than the others. There are equally good wine sparklers like Iron Horse or Domaine Chandon which are priced reasonably, depending on where you are eating.



There are wines that are better when they are less than three years old. You can try ordering white wines like Pinot Blanc or French Macon are dry white wines that command good prices and can be eaten well with appetizers. Wines are best drunk when they have been properly chilled.



Many modern wines do not need to be aged over a great period of time; therefore extensive cellars are often unnecessary. Having said this, if you have the time, space and resource to excavate a cellar, your wine will surely benefit. A purpose built cellar is not normally an option for most households and so suitable alternatives must be explored.

To Really Enjoy Superb Wine - Top-up with NAD

When an alcoholic beverage is swallowed, it passes through the stomach into the small intestine where the ethanol is rapidly absorbed and distributed throughout the body. The ethanol enters body tissues in proportion to their water content. Therefore, more ethanol is found in the blood and the brain than in muscle or fat tissue. The ethanol is greatly diluted by body fluids. For example, a 1-ounce shot of 100-proof whiskey, which contains 0.5 fluid ounces of ethanol (about 15 mL), is diluted 5000-fold in a 150-pound human, producing a 0.02% blood alcohol concentration. Alcohol and our Body's Biochemistry Ethanol is toxic, (especially for the one out of ten people born with a NAD Energy Deficiency) and the body begins to dispose of it immediately upon its consumption. Over 90% of it is processed by the liver. In the liver, the alcohol dehydrogenase enzyme powered by NAD converts ethanol into acetaldehyde, which is itself toxic.



Acetaldehyde is destroyed almost immediately by the aldehyde dehydrogenase enzyme, only if enough NAD molecules are available to power the process, which converts it to acetate ions. If enough NAD is not available the acetaldehyde builds up resulting in a reaction similar to a so-called alcoholic treated with Antabuse (disulfiram).



Acetate is a high energy compound, especially for our billions of brain cells and is available 8 minutes after the first drink. Food roughly takes 42 days to act similarly. So-called alcoholics obtain 35% or more of their daily energy needs from alcohol because their normal biochemical route of food to energy are impaired due to their maternally inherited NAD Energy Deficiency.



Every day an adult converts a quantity of ATP (bio-energy metabolized from food by NAD and the energy metabolic co-factors) corresponding to at least half his or her body weight, and nearly a ton during a day of hard work. The body needs 1kg of NAD for every 2kg of ATP to be converted from food particles.



The hydrogen atoms represented by these equations are not unattached, but are picked up by another biologically important compound, nicotinamide adenine dinucleotide (NAD), one of its more than 100 functions is to carry hydrogen atoms. NAD is involved in both of the above disposal processes of alcohol, and by doing this NAD is converted to NADH.



NADH must be recycled to NAD for the disposal of ethanol to continue. If the amount of ethanol consumed is not great, the recycling can keep up with the disposal of ethanol. The ethanol disposal rate in a 150-pound human is about 0.5 ounce of ethanol per hour, which corresponds to 12 ounces of beer, 4 ounces of wine, or 1 ounce of hard liquor requiring 586mmol of NAD.



This natural biochemical processing of alcohol is impaired in NAD Deficient persons and if alcoholic beverages are consumed on a regular basis (without the supplementation of the body's natural NAD resources) the condition referred to as "alcoholism" can develops.



The average NAD Energy Level of "alcoholics" based on the results of blood tests done independently by major South African Pathological Labs (Ampath, Lancet etc) is 66 instead of the normal level of 100+.

There is a particular area of instability in the biochemistry of our bodies, which contributes to problems with memory, irritability, problems with concentration, depression, a decrease in mental energy, anxiety, chronic fatigue and a craving for alcohol, nicotine and sugar. This condition is a deficiency in Co-enzyme 1 or nicotineamide-adenine-dinucletide (NAD). We refer in this instance to a metabolic energy deficiency!



You read correctly: We are dealing here with a measurable energy deficiency. Most of the symptoms, which are referred to in the above-mentioned, are merely masks which hide the actual problem. Behind these masks there is most probably a genetic defect - and you can definitely do something about it.



All human activities require energy. Each cell in your body has a particular function and requires energy, to be able to do its job. This energy is produced by various chemical processes in the cells, in little "power plants", which exist as small parts in the cell. We refer to such a power plant as the mitochondrium.



Food, which we consume, is converted into glucose by means of digestion. The glucose is the fuel in the power plants. Most processes in a power plant, which releases energy, however require a particular assistant. We call such an assistant a co-enzyme. Without the co-enzyme, the power plant will simply not function.



NAD is the co-enzyme, which maintains the processes in all power plants. It is therefore clear, that if there is a deficiency in NAD or if there are too few power plants in the cells, that there is an energy deficiency. NAD is also produced by the body on its own, from food.



A metabolic energy deficiency refers to a deficiency in chemical energy, with which 10% of all people are burdened. As a result of a genetic deficiency in mitochondria (power plants), this energy deficiency will clearly be observed in families, where various masks hide the deficiency. Grandmother might therefore suffer from obesity, her son from workaholism, her daughter from depression and her granddaughter might be a drug addict.



The egg cell of the woman starts with a shortage of power plants. The children inherit no power plants from their father, because all of his "power generators" are located in the tail of the sperm cell and the tail is discarded during conception. The daughter and son will therefore inherit an energy deficiency, but the son can marry a woman, who has enough power plants. The problem therefore ends at that stage. The daughter however spreads the problem.



There are standard laboratory tests, which indicate a metabolic energy deficiency. A blood sample is taken and lactate and pyruvate blood tests are used, which are good indicators of the biochemical NAD energy level. Three NAD Energy Levels and the NAD Energy Block are then calculated. The NAD Energy Block is then used as basis to recommend a NAD Nutrition Protocol.

The problem was that relapses were common and many addicts had to return to the hospital. O'Holleran did realize his patients would need a lifetime extra daily source of NAD. Attempts to develop an oral NAD daily tablet were not successful at that time.

Wines Of Montefalco - Sagrantino Passito - Italy


The most popular wine created in Montefalco is Sagrantino. Wines from the region of Sangiovese date back to pre-Roman times however, it was Franciscan friars that actually introduced Sagrantino wine grapes to the region from Minor Asia. Today, Sagrantino can boast about the certificates of quality DOC and DOCG, which it received in 1979 and 1992.

The uniqueness of Sagrantino is that one special variety is created by using partially dried grapes; however, other cultivated grapes are used as well.

Sagrantino of Montefalco?s dry version is a garnet red color with just a soft whiff of violet petals with an aroma of blackberries. The alcohol strength is between 13% and 15% and should be served at room temperature to delight your tastebuds.

The variety of Sagrantino created with partially dried grapes is a full-bodied wine, which is smooth, spicy, and warm. The alcohol strength is always 14% or more. The color of this variety of wine is also a garnet red.

Sagrantino Passito wine is another favorite of the Montefalco region and is the most traditional and ancient wine of the area. This dessert wine is created by using Sagrantino grapes with traditions that have been passed down through the ages. The grapes are fully ripe when they are chosen for Passito wine. They are placed on racks in rooms that are very well ventilated so the grapes can dry out evenly and slowly. They will go through the drying process for two months before they are pressed and made into delightful dessert wine.

Montefalco wines were at one time created by monks and their wonderful way of creating such exquisite wines still exist today with the help of Sagrantino grapes that are harvested at the perfect time, aged for the exact amount of time, and then pressed and turned into wine.

Other wines produced here are Montefalco Rosso DOC and Montefalco Riserva DOC. They are produced mixing up Sagrantino and Sangiovese grapes. These are very good red wines.

Wines produced in Montefalco are exported all over the world, making this city very famous and known.

Not too many years back if you heard the term wine cooler, your thoughts automatically went to Bartles & James and if someone told you about their wine collection you pictured a dusty underground vault, where bottles lined the walls in orderly rows, slowly aging to perfection. Your average person that lived in your average suburban home could enjoy a good glass of wine when out on the town, but seldom had the capacity to store wine in optimal conditions at home. With the advent of under counter coolers, a wine cellar is no longer a necessity in order to be a collector of fine wines. In fact, anyone can turn their kitchen into modern day wine cellar.



Fine wines are expensive and they are only worth the money if you have a place to store them. Wine is alive, constantly changing according to its environment. Lots of things affect what changes a wine, including temperature, humidity, darkness, calm, ventilation and the angle at which it is stored. A good wine cooler will take these things into account. You always want your wine to be stored so that it is horizontal, at the lowest, stable temperature possible, in a place that is free of vibration, and away from places where you store items that have a strong odor.



The ideal conditions for storing wine are at 50 -55 degrees and 70% humidity. A wine refrigerator or wine cooler is ideal for this task. Unlike regular refrigerators, wine coolers run a little warmer maintaining the optimum temperature for wine. Because they are electronic, their temperature never fluctuates, helping the wine to maintain its constant flavor. They also offer storage options so you can lay the bottles down, allowing the wine to always stay in contact with the cork. An under the counter wine cooler, built into your kitchen also offers extra protection from the natural light in your house.



When you go out shopping for a wine cooler, there are some things to look for. You want to make sure that the door of the cooler is dark. Try to avoid clear glass coolers. They may look fabulous when they are filled with rows of wines glittering under the fluorescent lights of your kitchen, but all of the light that will seep in the bottles will ruin your wine. When wine is exposed to too much light it creates a condition called being ?light struck.? The result of this condition is that the wine ends up tasting like dry cardboard.

Stand in the middle of your kitchen and take a minute to observe each spot under your counters that the cooler could potentially be placed. Make sure you don?t install it near a stove or oven, which could affect its temperature. Stay away from the refrigerator and the dishwasher because vibrations from both of these appliances will over time, ruin your wine. Placing an under counter wine cooler near the sink also puts if too close to vibrations as water runs through the pipes. If you have an island that has no appliances situated on it you have found the perfect location for your under counter wine cooler.

Good news! A recent study suggested that resveratrol, a red wine compound, may extend our life.

The study was conducted on fries and worms to see if resveratrol can extend life in these creatures. Previous studies suggested that yeast life can be extended with resveratrol.

It was found that worms and fires fed resveratrol live 30% longer than those that were not fed resveratrol.

Fries and humans share many biological processes. Therefore, there is a chance this red wine compound may also extend life in humans.

Previous studies have found that resveratrol is protective against heart diseases largely due to the antioxidative properties of this compound.

However, the current finding, life-extension with resveratrol, may not be due to its antioxidative properties. Rather, resveratrol may act just like calorie-restriction that activates proteins called sirtuins similar to sir2. Sir2 is an important protein that is present in many animals and participate in the aging regulations.

More good news with resveratrol! Resveratrol does not have any negative impact on the fertility while calorie-restriction may cause infertility. Actually, resveratrol boosts the fertility of fries.

The researchers plan to continue their work on mice. If they can duplicate the same results in mice, resveratrol can be a wonder chemical that can help us extend our life to certain degree.

This study was done by David Sinclair of Harvard Medical School in Boston and colleagues at the University of Connecticut and Brown University in Rhode Island. The study was published in the July 13 issue of journal Nature.
